WHere is a home-style version of a beverage found on the seasonal drinks list. It's a large-volume premix that's loaded with essence of a holiday season, which makes it ideal for a celebration. Any leftover citrus syrup you can use for brunch beverages, desserts, or to make another batch of this cocktail.

For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put every components in a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, take off the stove allowing it to cool down completely. Pour to a sterilised bottle, close it keeping it in the refrigerator, where it will keep for up to a month.
Preparing the Cocktail Base: Mix the specified spirits and syrup into a sizeable container, leave to sit for an hour, then filter it preferably using cheesecloth, so it's fully clarified.
To serve: Measure 85ml of your batch mix into your mixing glass containing ice, and agitate lightly for a minute to chill. Pour into an frosted cocktail glass or a similar vessel, decorate with some cranberries and finish with a brief mist with the mandarin essence over the drink.
